When I handled my deer, I used my knife extensively. Separate the meat from the bone. Slice off the silver skin (they can be fine in a soup after pressure cooking). Don't throw away or try to take tiny bits from the ribs, cook the ribs on their own.
 
We do our best to get all the sinew and silver skin we can. The scavenging deer eating my Hostas had better beware.
