Phila Lorn of Mawn wins a major James Beard chef award​

Phila Lorn has emerged, all right.

Lorn, the chef who, with his wife, Rachel, own Mawn, a Cambodian noodle house that is one of Philadelphia’s hottest reservations, was named the year’s Emerging Chef at the 2025 James Beard Awards ceremony in Chicago Monday night.

The South Philadelphia-raised Lorn, 39, is the youngest of five children born to Cambodian refugees. Lorn, whose parents named him after their adopted city, called the award “a dream.” After thanking the Beard Foundation and his wife, Lorn dedicated his award to the idea of “having confidence and owning what you do as a craft.”

Dickson's Farmstand Meats: Opened in 2009 in The Chelsea Market, Jake Dickson was a pioneer in the urban "Nose to Tail" butchery movement utilizing artisan meats from local small family farms, with an excellent in-house charcuterie program, featuring beef lamb, pork, duck and chicken, processed into steaks, chops, stew meat and roasts and many unusual cuts. Since filming this they have expanded considerably and are now located in the basement of the Chelsea Market with a full service meat centric restaurant.

What Do You Eat in Antarctica? | Antarctic Extremes​

Generally, an adult human consumes around 1,600 to 3,000 calories daily. But in colder climates, people need to eat more: Keeping our warm-blooded bodies warm requires a lot of energy. It’s so cold in Antarctica that the average person needs to consume 3,200 to 5,000 calories a day (watch out, Michael Phelps). And because the continent is frozen, no food grows there naturally.
So how do the hundreds of scientists and support personnel who visit Antarctica’s McMurdo Station each year stay fed?
Throughout their one-month stay in Antarctica, hosts Caitlin Saks and Arlo Pérez discover the secret sauce of Antarctic cooking from experts at McMurdo’s galley (Hint: Need to reconstitute a meal? Just add cheese! Need to keep that cheese beyond its expiration date? That’s what freezers are for) and scientists at remote research sites. They glimpse the early days of Antarctic food storage at a long-preserved hut from theTerra Nova Expedition that began in 1910.
Along the way, Caitlin and Arlo discover the glory of 24/7 pizza and “freshies,” the cardboard-like texture of a protein bar several years past its expiration date, and the true meaning of “eat your vegetables.”

The James Beard Awarded Chef Who Hosted The First Ever PBS Chinese Cooking Show​


I don't tune in to Food Network too often these days. I've never been particularly into celebrity chef culture, and I don't really care for competitions. However, when I was growing up, my favorite programs to watch were cooking shows on PBS. Julia Child was must-see television, of course (I was fascinated by her accent), but my sister and I really loved "Yan Can Cook." What we didn't know at the time was how groundbreaking the show was. Martin Yan, a native of Guangzhou, China, was hosting the first Chinese cooking show -- in fact, the first Asian cooking show of any kind -- ever to appear on PBS. Back in the day, PBS had just about the only cooking content on American television.

If you’re in the Cherry Hill mall area and want a quick, seated alternative to food court fare, Habit Burger is a solid choice. The char-grilled burgers, especially the Charburger, deliver a satisfying, customizable experience. Particularly notable are their onion rings, tempura green beans, and good variety beyond burgers. While the ambiance is basic and prices aren’t rock-bottom, the overall flavor and execution earn frequent return visits in its reviews.
