A friend and I usually split 1/2 a beef every year. Thats enough for me for about a year. Maybe a little less. Got in touch with him a couple weeks ago and he cant afford it this year so I am going solo on the 1/2. The farmer Was just getting ready to send a beef in so perfect timing for me.
Here's the price breakdown for anyone interested. Prices are for Southern Ohio.
Hanging weight is 460 lbs. This is the weight you use to pay everyone.
Farmer gets 4.20 a lb. x 460 = 1932
Butcher get 45 bucks for kill fee and .80 cents a lb for the butchering work. =413 total
Total is 2345.
Yield is usually around 60-63% of hanging weight or about 290 lbs.
Just a hair over 8 bucks a lb for prime beef.
For burger and some cuts thats a little high. Burger at Costco or Sams club is around 6 bucks a lb but Not as good a quality. You get a huge savings on the upper parts of the beef. Filets, rib eye, New York strips and sirloins as well as all the roasts. Plus all of those are prime cuts where as Sams club is mostly choose. Costco does have some prime cuts but still a lot more money.
At the end of the day though, it's not about saving money. Food security knowing I have 2 years worth of beef I the freezer and also knowing that my farmer guy is going to stay in business with my help. He actually called me yesterday to thank me for the business. Really nice guy and I know I will always have a place in the rotation whenever I am ready again.
Since I am starting carnivore this may only last a year or so. Not a bad deal to eat a lb of beef everyday for a year for 50 bucks a week.
Great idea and cheap a piece of mind.I do the same. We have four upright freezers. Two for beef, one for pork, and one for chicken and meals we have cooked in bulk and vacuum sealed like chilis or soups.
To protect your meat investments, may I suggest to you get a freezer alarm. These are wireless and work through walls and floors. My freezers are in the basement, and I keep the display panel in my living room and have no issues with connectivity. I can see at a glance what temps the freezers are holding - usually around -15 F.
